½ pound hamburger
1 medium onion, chopped
1 cup chopped celery or green bell pepper
1 clove garlic or teaspoon garlic powder
1 teaspoon salt
3 - 4 teaspoons chili powder
¼ cup water
1 (15 ounce) can kidney beans or pinto beans with liquid
1 (15 ounce) can cream style corn
1 (8 ounce) can tomato sauce
1 teaspoon oregano (optional)
6 corn tortillas, cut into 1 inch pieces
½ cup grated cheese
Brown ground beef in a large skillet. Add onions, celery or green
pepper, garlic, and salt and stir until onion is soft. Drain fat from
skillet (tilt skillet, spoon out fat). Mix chili powder and water,
add to meat. Add the rest of the ingredients, except the cheese, and
mix well. Stir until it starts to boil. Turn heat down, sprinkle with
cheese, cover with a lid or piece of foil and simmer for 10-15 minutes.
Makes 5-6 servings.
